I love my smoothies ice cold in summer, but I avoid the ice when I have them in winter. Blueberries and coconut are amongst my favorite ingredients in smoothies. The great thing about smoothies as we all know is that we can put things into it that we know are healthy but that we would never eat as is. Chia seeds for one. No one sits and munches on chia seeds–it’s actually not recommended as they can expand in your throat and cause difficulty breathing. You won’t find anyone sitting down just eating a spoonful of maca powder, hemp seeds, etc. These are those things that get the tagline of “Super Foods” but most of these highly nutritious foods are not highly tasty. Thus, the smoothie allows you to add these things to your diet quite easily!

Recipe: Blueberry Coconut Smoothie from 190 Calories
Serves 3; approx 190 cals each
Serves 2; approx 284 cals each
Serves 1; approx 568 cals
Ingredients:
- 1 1/2 frozen Banana
- 1 1/3 c Coconut Water
- 1/4 c shredded Coconut, unsweetened
- 1 c Blueberries, fresh or frozen
- 2 c Spinach or other leafy Greens
- 1-3 tsps Coconut Oil
- 1 T Almond Butter
- 1 T Hemp seeds
- Ice cubes, optional
- a little extra Water if you prefer a thinner mix
Blend until smooth and enjoy.
