Recipe: Low Calorie Blueberry Lassi Smoothie
A beautiful fuschia coloured drink packed with antioxidants to brighten those end-of-the-week blah moments.
Serves 2; 262 cals each
Serves 4; 131 cals each
Ingredients:
- 2 cups Blueberries (fresh or frozen)
- 2 cups non fat Yogurt
- 1/2 cup Coconut Milk, adjust thickness to your liking
- 1 tablespoon Honey
- 1 teaspoon Vanilla Extract
Optional:
- 1 ripe Banana – 105 cals
– you may not need the honey so swap them; the calorie difference will be 40 extra. - juice 1/2 Lemon – 12 cals
- pinch ground Cardamom
- pinch Sea Salt
Try any of these to vary your smoothie and don’t forget to adjust the calories, if that is important to you.
Blend until smooth and enjoy.
