This delicious tropical smoothie with coconut and strawberry recipe is from Bintu at Recipes From A Pantry. As always, jump to the next page for the recipe if you are in a hurry to try it.
I agree with Bintu when she says it is ‘really, really, really, really good,’ lol!
But then I love pineapple and coconut in a smoothie. And it was interesting just how much color those few strawberries added. I’d never have expected them to take over the look. Of course, I’m not an artist so mixing color is not my forte, lol!
The frozen bananas add a wonderful creaminess to the recipe and the coconut milk makes it filling. There are three ways to add the coconut milk:
1. Full fat coconut milk from a can will make this a really filling as well as flavorful smoothie;
2. Light coconut milk, again from a can, will reduce the calories a little, and still give some of that rich coconut flavor; and
3. Coconut milk beverage which has the least calories, and most delicate flavor.
As I said, this smoothie is good. Here’s how Bintu put it …
One of the many pleasures of working from home is, being able to take a break when the sun comes out and whip up a smoothie … sit in the sunshine, drink it and forget about the world.
Ok so that forget about the world bit lasted for exactly 15 mins – till I realised that this smoothie was really, really, really, really good. So, I promptly went back in, redid and photographed it. Then drank it all over again for lunch.
Why don’t you give it a try and let us know if you agree.
