I love to eat cashew nuts but do not often think of adding them to a smoothie. Maybe that’s because they are so expensive and I want to enjoy them as they are. However, it is such a tasty result when I do. And this delicious smoothie with raspberries and pineapple, with a banana thrown in for creaminess and good measure, is a case in point.
As we’ve said many times, using frozen fruit or adding ice gives an amazing texture to your smoothies. It makes them really thick and the banana makes it creamy. So if you freeze your bananas as they start to ripen they do double duty; thickening and cream-ening (I know there’s no such word, but it fits, lol!) and making great smoothies :)

Recipe: Raspberry Pineapple Cashew Smoothie
Serves 1; approx 321 cals
(with skim milk = 346)

Ingredients:
- 1 ripe Banana
- 1/2 cup Almond Milk, or nonfat Milk
- 1 cup fresh Raspberries
- 1/2 cup frozen Pineapple chunks
- 1/8 / 15 g cup raw Cashews
- Ice, to taste, if you wish
Blend until smooth and enjoy.
