Low Calorie Blueberry Lassi Smoothie

… chose blueberries because in addition to being antioxidant powerhouses, they also help keep your mind young and alert. Something I was in dire need of. Although baking a loaf of bread would be my zen-activity, I chose not to do it this time. With my current frame of mind I would have definitely set the house on fire. A lassi strangely, calmed me down.


Recipe: Low Calorie Blueberry Lassi Smoothie

 

A beautiful fuschia coloured drink packed with antioxidants to brighten those end-of-the-week blah moments.

 

Serves 2; 262 cals each
Serves 4; 131 cals each

Ingredients:

  • 2 cups Blueberries (fresh or frozen)

  • 2 cups non fat Yogurt

  • 1/2 cup Coconut Milk, adjust thickness to your liking

  • 1 tablespoon Honey

  • 1 teaspoon Vanilla Extract

Optional:

  • 1 ripe Banana – 105 cals
    – you may not need the honey so swap them; the calorie difference will be 40 extra.

  • juice 1/2 Lemon – 12 cals

  • pinch ground Cardamom

  • pinch Sea Salt

Try any of these to vary your smoothie and don’t forget to adjust the calories, if that is important to you.

Blend until smooth and enjoy.
