A friend will be travelling for a few months and had to empty the refrigerator and freezer before she went off. As she was down to the last couple of days we looked to see what is still lurking there.
We found sriracha, lots of kefir, carrots, butternut squash, oranges, apples, cucumber, beets; frozen strawberries, raspberries, peas, spinach, the excess liquid from tomatoes she cooked with recently.
Yes, a lot more than she expected to have at this stage because she decided to have more meals with friends than planned before departing. Now she was desperate to waste as little as possible and not to hand it on to her friendly neighbor … i.e. me, lol!!!
So we put our thinking caps on and came up with a few ideas. This Pineapple Strawberry Carrot Smoothie is one of them – and it’s only 170 calories, so it fits nicely into our healthy eating weight loss plan

Recipe: Strawberry Pineapple Carrot Smoothie for Only 170 Calories
Serves 4; approx 170 cals
Serves 2; approx 333 as a meal replacement
Ingredients:
- 1 cup Kefir (or Greek Yogurt, adjust cals if necessary)
- 200 ml / 1/2 plus 1/3 cup Water
- 2 cups / 290 g Strawberries, fresh or frozen
- 1 slice Pineapple, fresh or frozen
- 1 tbs raw Honey
- 1/4 cup Oats
- 2 tbs Nut Butter
- 100 g Carrots
- 1/2 inch Ginger
- pinch Salt
- Ice, if fruit is not frozen
Blend until smooth and enjoy.
