This was another new combo for me. I really liked it but had to be organized and prepared ahead of time to make it. Really worth the effort, but if you do not have the time (or didn’t think ahead as is my usual, lol!) you can just throw everything into the blender. It will still work, although you’ll miss the caramelization.
The recipe is from Kirsten at ComfortablyDomestic. The link to Kirsten’s website is at the end, if you wish to do things properly.
Kirsten had been thinking ‘grilled pineapple’. Then she experimented and was delighted with the result she achieved. She says …
I applied the [roasting] technique to ripe peaches, and the end result was like whoa. Where have roasted peaches been all my life? The peachy flavor is so much more intense after basking in the oven …
Roasted peaches are great on their own, a delightful add-in to morning oatmeal, and over-the-top delicious served warm with a scoop of vanilla ice cream – all of which we tried in the same week. By far our favorite application was in [this] smoothie form.
Btw, grilled pineapple would work well, too.
Recipe: Honeyed Peach Smoothie from 160 Calories
Serves 2-4; approx 160-320 cals each
Ingredients:
4 very ripe Peaches
1/2 Tbs salted Butter
2 Tbs Honey
Check out directions at Kirsten’a website (see below). It’s worth the effort. (But if you are in a hurry just throw everything in the blender together … it’s not quite the same, but will work.)

1 cup nonfat vanilla Yogurt
1 cup of small Ice cubes
Enjoy.
