Double Coconut Banana Smoothie

Are you sometimes disappointed with coconut smoothies? Do you sometimes find them decidedly lacking in coconut flavor? The secret, I find, is to use full fat coconut milk from a can rather than the coconut milk from the chilled cabinet in the store.

A double helping of coconut from Thai canned coconut milk and cream of coconut gives this smoothie, from Wendy O’Neal at AroundMyFamilyTable, a delicious coconut flavor.

There’s some sweetness from the banana, all the better for being ripe, and some fruitiness from the juice. All round a tasty smoothie recipe.

 

Recipe: Double Coconut Banana Smoothie

Serves 2

Ingredients:

  • 1 ripe Banana, sliced

  • 1/2 cup Thai Kitchen Coconut Milk

  • 1/2 cup Ice cubes

  • 1/2 cup Pineapple or Orange juice

  • 1-2 tbls Cream of Coconut

Blend and enjoy.
