Recipe: Berry Chia Layered Smoothie
Serves 2 large or 3-4 small
Ingredients – in order of use:
- 4 tbsp Chia seeds
- 500ml / about 2 cups Milk, plant based or your choice
- 200ml / about 3/4 cup of Yogurt
- 150ml / scant 3/4 cup Blueberries
- 200ml / about 3/4 cup Red Berries, eg strawberries, raspberries, cranberries
- 2 Bananas
- 150ml / scant 3/4 cup plant based Milk.
+ more Fruit if you wish to decorate the insides of your glasses or to pile on top
Optional: a little Honey, or Maple Syrup or Dates to sweeten
DIRECTIONS:
Note: For the layering to work you want a thick but drinkable consistency, especially the blue and white layers.
To Make the Chia Pudding the Night Before
Take the …
- 4 tbsp Chia seeds
- 500ml / about 2 cups Milk, plant based or your choice
Mix well and leave for a few minutes, then stir again to make sure the seeds do not clump together.
Leave overnight in the refrigerator to thicken.
The next day add …
- 200ml / about 3/4 cup of Yogurt, plant based or your choice
OR a little more Milk
Add a little at a time to get a thick but drinkable consistency.

Making Your Smoothie
For the Blue layer take the …
- 150ml / scant 3/4 cup Blueberries
- 200ml / about 3/4 cup Chia pudding
Blend together.
Divide equally in your glasses.
For the White Layer take the …
- Sliced Strawberries
- Remaining Chia pudding
Working one glass at a time, take the sliced strawberries and place around the glasses.
Add a portion of the chia mix carefully to each glass, trying to keep the quantities the same in each glass.
For the Pink layer take the …
- 200ml / about 3/4 cup Red Berries, eg strawberries, raspberries, cranberries
- 2 Bananas
- 150ml / scant 3/4 cup plant based Milk
Blend together.
Pour some into each of your glasses.
Top each glass with more fruit, if you wish. Add a straw and enjoy.
