
This smoothie from Natasha at NatashasKitchen is a delicious combination of fruits and coconut water, or you could used coconut milk. There is a little Omega 3 fat thrown in for good measure.
Natasha suggests using flax seed oil, but if you don’t have any on hand then substitute 1-2 tablespoons flax seeds or chia seed. As I’ve often said, smoothie recipes are flexible.

Recipe: Strawberry Apricot Coconut Smoothie
Serves 4 x 1-cup
Ingredients:
1 cup cold Coconut Water, or cold filtered Water
1 cup Strawberries or Blueberries
2 cups (about ¾ lb) Apricots, pitted
1 cup Pineapple, frozen
1 tsp Flax Seed Oil, optional, but adds a nice punch of Omega 3
OR 1 tbsp Flax Seeds, measure your seeds then grind them
Blend until smooth and enjoy.
