I always think a slice of watermelon looks like a great big smile; smiling because it’s summer, most assuredly!
Our tasty and refreshing smoothie today is also LOW CALORIE into the bargain at only 175 calories for a serving. It’s chock-full of fruit so there are loads of vitamins and fiber and with just a hint of greens, including a little mint. Did I say tasty?

Recipe: Low-Calorie Watermelon Fruity Smoothie
Serves 2; 175 calories per serving
Ingredients:
- 1 Lime, juice only
- 1/2 cup Coconut Water
- 1 small handful of fresh baby Spinach*
- 2 sprigs Parsley*
- 2 sprigs fresh Mint*
* Blending the greens with the liquid first till it’s completely smooth can make for a less intense green smoothie – in color at least; the nutrients are still there!
Then add the fruit:
- 1 1/2 cups Watermelon chunks
- 1/2 cup Strawberries, frozen
- 1 cup Pineapple pieces, frozen
- 1/2 cup Mango chunks, frozen
Blend until smooth, adjusting the liquid if necessary to reach your desired consistency. Enjoy.
