Katrina’s Skinny Coffee Smoothie

Time to wake up and smell the coffee! And in this case it’s a coffee smoothie. Of course :o) But there are some added nutrients not normally there and it is a filling recipe that will keep you going longer than just a coffee by itself.

Start your morning off with a Skinny Coffee Smoothie. Packed with bananas and coconut milk, they are vegan, dairy-free, and naturally gluten-free.

 

Recipe: Katrina’s Skinny Coffee Smoothie

Serves 2

Ingredients:

  • 2 Bananas

  • 1/2 cup Coffee, cold or room temperature *

  • 1/4 cup Coconut milk

  • 2-3 tbsp Coconut flakes (optional/if you like it sweeter)

  • handful of Ice

Blend until smooth and enjoy.


* In summer I like to keep a jug of coffee in the refrigerator so it's quite quick to throw this together.

And while I'm all for green smoothies, I tend not to put greens in this mix as it gives an unpleasant muddy color. Try cauliflower instead.
