Coconut is sooo good not only for adding flavor but because of all the nutrients it contains. Things like fibre, loads of vitamins like C, E, B1, B3, B5 and B6; minerals, too, including iron, selenium, sodium, calcium, magnesium, copper, potassium and phosphorous. The lauric acid, one of the medium chain saturated fatty acids (MCFAs) it contains, converts in the body to monolaurin, providing antiviral and antibacterial properties that destroy a wide variety of disease causing organisms.
