
Megan at WithSaltandWit has this lovely smoothie recipe that I’m heading to the kitchen to make. I love coconut milk and this sounds delicious. I really like using dates to sweeten my smoothies – not to mention having a few as a tasty treat – but I usually have to remember to cut them up first as sometimes they like to avoid the blender blades, lol!

While this smoothie is a velvety, addicting and healthy smoothie to start your day, I savor it just as much for a night cap to a chaotic weekend.
Recipe: Vanilla & Almond Butter Smoothie with Coconut
Serves 2
Ingredients:
1 cup Coconut Milk
¼ cup Almond Butter
10 small Dates
1 tsp Vanilla paste, (or vanilla extract)
2 cups Ice
Optional:
Sweet Leaf Stevia Vanilla Creme, or Truvia, to taste
Vanilla Protein Powder
Blend until smooth and pour into two glasses. Enjoy.
NOTES
Add more or less ice to make the smoothie thinner or thicker consistency.
Vanilla protein powder would be great to add for a post workout smoothie!
Add the stevia if the dates or not sweet enough and for more intense vanilla flavor.
