Oats, chia and coconut are great ingredients with which to start making a smoothie, especially one with staying power. Throw in some tropical fruits and you have one healthy, tasty, delicious, yummy, smoothie to enjoy any time of the day or night. Yes, there are many folks out there who work the night-shift who enjoy smoothies, too, you know!

… but don’t skimp on the lemon juice! I know it might sound like a strange addition, but it adds a perfectly refreshing bite that compliments the sweeter flavours of the other fruits really nicely.

Recipe: Tropical Oat Smoothie
Serves 1
Ingredients:
- 1/4 cup (20 g) rolled Oats
- 1 tsp Chia seeds
- 1/4 cup (60 ml) light canned Coconut Milk*
- 1/2 cup (120 ml) Coconut Water or unsweetened Nut Milk
- 1/2 cup (60 g) frozen Mango chunks
- 1/2 cup (60 g) frozen Pineapple chunks
- 1/2 medium-size ripe Banana, frozen (50 g)
- 1-2 tsp Lemon juice (about 1/2 small lemon)
* If you do not have coconut milk then just increase your other liquid by 1/4 cup, i.e. add 3/4 cup liquid.
Blend until smooth and enjoy.
Alternately, soak the oats and chia in the liquid overnight. Then proceed as normal.
