This tasty recipe is from Laura Wright at TheKitchn and fits well in our healthy eating weight loss program.

The author suggests you can build a better smoothie base and reduce the sugar by switching out the banana. Banana is long recognised as giving the thick, creamy base we love in our smoothies but she has a suggestion that’s a winner in her mind, especially for keeping the calories down in a thick and filling recipe. What do you think?

Laura says …

Our base here is rolled oats and … wait for it … frozen zucchini! The oats and zucchini together, once blended, make such a creamy, thick, and frothy base. After you try this, you might just start adding frozen zucchini to all of your smoothies …

Color: If you’d prefer the bright-pink color to really shine through in this smoothie, peel your zucchini before slicing and freezing.

Initially, this recipe may seem high in calories but remember it is a filling meal and as such is in line with the recommended 300-400 calories for a meal-replacement smoothie.
