That extra hour at the weekend was good, but already I miss the longer days. Somehow it’s just not the same getting up an hour early to get the benefit of the daylight. I’d rather have it in the evening. Oh well, it’s downhill for the next couple of months until the days start to stretch out again.

Recipe: Sunshine Smoothie to Brighten Dark Winter Days
Serves 2
Ingredients:
- ½ cup baby Carrots
- ½ cup Orange juice
- 1 cup frozen Pineapple chunks
- ½ cup frozen Mango chunks
- 1 TB Honey
- 1 TB Chia or Flax Seed
- 1 cup plain Greek Yogurt
Blend until smooth. Enjoy.
