While waiting for the sun to return to these northern climes I’m in total agreement with Lee at FitFoodieFinds; we both feel white as a ghost and is in need of some sunshine, lol! So while we wait for the sun to make it’s appearance we have a little pretend sunshine and a big boost of Vitamin C in this delicious smoothie. (See the recipe at the end of the post.)

Recipe: Sunshine Orange Creamsicle Smoothie
Serves 1
Ingredients:
- 1 large Banana, frozen
- ½ teaspoon Vanilla extract
- ¾ cup Orange Juice*
- ½ cup Coconut Milk (from the carton)
Optional:
- 1 scoop vanilla Protein Powder, coconut whipped cream, orange zest
* 2-3 whole oranges will give you the juice you need – and remember you’ll get added cancer-fighting nutrients if you put the grated zest in, too. Oranges vary in the amount of juice they hold so buy extra, just in case.
Did you know that a warm orange will give up more juice than a cold one? So if you’ve had them in the refrigerator, or the house is cold, put them in the microwave for a few seconds before juicing them.
Another tip for releasing the juice is to rub them between your hand and a hard surface for a minute.
