Now this was not my first thought for a smoothie. I’ve been making smoothies for ages and used all sorts of delicious fruits. But rhubarb? I love it in pies, in crumbles, in tarts, but in a smoothie? This recipe is from Elaine at FlavourAndSavour, and you’ll find the ingredients over the page. It is naturally sweetened. Elaine grows her own rhubarb and freezes it so she can use it for longer. She says …
Stew some rhubarb with a little honey or maple syrup to keep in the refrigerator so you can quickly whip up a smoothie. Refined sugar is not necessary at all. The natural sweeteners work equally well. Using ripe bananas and strawberries in your smoothie guarantees a sweet result too. Choose your favourite non-dairy milk, toss in some chia seeds for protein and start your day with this nutrition-packed strawberry rhubarb smoothie.
