[RECIPE] Slim Down Smoothie #1 – Sally’s Orange Sunshine

Sunshine Smoothie

I was looking for a fast healthy pick-me-up this morning when I came across this orange sunshine smoothie from Sally at sallysbakingaddiction.com. And it fits the bill perfectly! You won’t believe how simple & quick it is – just using fruits and a splash of OJ.

Feeling lethargic and run down? Well, you are 5 minutes away from feeling a lot better. Vitamin C has never tasted sooooo good! Bright citrus flavors paired with creamy banana, sweet mango, and a splash of orange juice.

Sally says ...

This shockingly simple smoothie will make you feel like your dippin’ your toes in the sand listening to the ocean.

Check out the recipe below and let me know what you think.

Here’s Sally’s secret ...

The frozen banana makes the healthiest, purist, creamiest base for a super thick smoothie. In fact, I often eat a giant bowl of blended frozen “banana whip” (just 2 frozen bananas cut into chunks then blended with a touch of milk) and sprinkled mini chocolate chips on top. Mind-blowing good. Try it!

Without a doubt, frozen bananas are my secret weapon when it comes to creamy smoothies. And no one will be any the wiser! “Is there ice cream in this?” Kevin asked when he tried a sip of today’s smoothie. Ha!

Play around with the fruits you use. Frozen mango, a little frozen pineapple, and 2 oranges are what I like to use. Have a grapefruit on hand? Use 1 orange + 1 grapefruit instead. Or decrease the mango and increase the pineapple. Go fruit wild.

This creamy smoothie tastes like a tropical mango-pineapple version of an orange julius. Enough said! So go ahead, put your feet up and dream of warm sunny days with a citrus bursting smoothie in hand. Makes the gloomy rain and snow outside seem much more tolerable!

Recipe: Sunshine Smoothie

Ingredients (Serves 2)

Sunshine Smoothie
  • 1 frozen ripe Banana, previously peeled & sliced

  • 1/4 cup Orange Juice

  • 2 Oranges, peeled and sliced

  • 1 cup frozen Mango chunks

  • 1/2 cup frozen or fresh Pineapple chunks

Tips & Options:

  • Instead of two oranges, try 1 orange and 1 grapefruit.

  • I prefer frozen mango chunks over fresh because they lend a creamier texture to the smoothie.

  • For an added nutritional punch, try adding 1 cup of your favorite greens.

Indulge in Quick and Easy Small-Batch M&M Cookies with an Air Fryer

Update The Air Fryer Revolution: A Quick Alternative for Fresh CookiesImagine walking into your kitchen and being enveloped by the rich, buttery aroma of freshly baked cookies in just minutes. Thanks to the air fryer, baking has undergone a remarkable transformation. No longer do we need to preheat a bulky oven and wait for hours only to devour a mere few cookies. The air fryer, typically heralded for crisping fries, is making a name for itself as a cookie-baking miracle. It delivers delightful small-batch M&M cookies right when you need that sweet indulgence, without the stress of other baking methods. Why Choose Small-Batch M&M Cookies? There are countless benefits to whipping up a small batch of these delightful treats. Firstly, a small batch—typically around 6-9 cookies—ensures you won't be tempted to overindulge. With cookies slowly disappearing from the plate, you can savor each bite, enjoying that chewy, chocolatey goodness without worrying about leftover sweets bogging you down. Plus, every cookie you bake is likely still warm and fresh, elevating the overall experience.Ingredient Smartness: The Right Choices for Tasty TreatsCrafting the perfect small-batch M&M cookies is all about the quality of your ingredients. Use rich butter, brown sugar for that chewy texture, a hint of vanilla, and of course, those colorful M&Ms. The charm of mini M&Ms lies in their size, which provides a beautiful distribution of sweetness throughout each cookie bite. You’ll want to mix your ingredients just enough to maintain a plush dough—over-mixing can lead to unyielding results.Step-by-Step Guide: Baking in the Air Fryer1. **Prepare Your Equipment**: Preheat your air fryer for a few minutes to ensure perfect cookie temperature.2. **Mix the Dough**: Blend your softened butter and sugars, then mix in the egg and vanilla until smooth. Gradually add in flour, baking soda, and salt, culminating in a thick dough. Finally, fold in the mini M&Ms until evenly distributed.3. **Shape and Air Fry**: Scoop tablespoon-sized balls of the dough onto a piece of parchment paper in your air fryer. It is important to space them a bit apart and flatten them gently before cooking. Bake at 350°F for about 5-8 minutes—keep a close eye on them!4. **Cool and Enjoy**: Once they are golden around the edges and soft in the center, allow them to cool slightly before placing them on a wire rack. The cooling phase is crucial for achieving the perfect texture.Endless Variations: Customize Your CookiesWith only a small batch to work with, experimentation is both convenient and encouraged! Feel free to substitute mini chocolate chips for M&Ms or switch up the flavor with peppermint extract, especially during holidays. These cookies serve as fantastic gifts when packaged beautifully—offering just a few warm delights to share and enjoy.Gather Friends and Start Baking! So the next time you're hit with a cookie craving but don’t wish to heat the whole oven, remember the magic of the air fryer. Not only does it save you time and energy, but it also invites a world of culinary creativity right into your kitchen. Essential Ingredients for a Balanced Smoothie To make a smoothie that’s both tasty and nutritious, start with a solid base of fruits and vegetables. Fruits like ripe bananas, succulent berries, and juicy pineapples not only contribute natural sweetness but also load your smoothie with vitamins. On the veggie side, leafy greens like spinach and kale are perfect—they blend smoothly and remain almost tasteless, allowing the fruits to shine! Protein and Healthy Fats: The Game Changers Adding protein is the key to a filling smoothie. Ingredients like Greek yogurt, peanut butter, or even silken tofu can enhance both the texture and nutritional profile of your drink. And let’s not forget about healthy fats! A splash of almond milk or a spoonful of chia seeds can keep you satisfied for longer. Superfood Add-Ins for Extra Benefits For a healthy boost, consider incorporating superfoods. Ingredients like spirulina, flax seeds, or even a scoop of your favorite nut butter can elevate the nutritional value without compromising flavor. A Few Ingredients to Avoid That said, beware of the sneaky ingredients that can derail your smoothie’s health mission. Discover the Joy of Making Easy Easter Cornflake Cakes This Spring

Update Tasty Twists on a Classic: Easy Easter Cornflake Cakes Easter is a wonderful time for family gatherings, bright decorations, and of course, delightful treats. Among the simplest and most nostalgic Easter desserts to prepare are Cornflake cakes. They don't just evoke memories; they bring the family together in the kitchen for some fun—and they require minimal effort! The Comfort of Nostalgia These Easy Easter Cornflake Cakes offer an inviting blend of nostalgia and creativity. Each bite represents a comforting throwback to childhood, evoking memories of joyous Easter celebrations filled with laughter and candy. They come together from just a handful of ingredients—chocolate, cornflakes, and vibrant chocolate eggs—making them an accessible choice for both novice and experienced bakers. Why Cornflakes? Cornflakes are the perfect foundation for these sweet little nests due to their light, crunchy texture. In the original recipe, it’s suggested to mix melted chocolate with cornflakes before shaping them into nests. This method not only adds sweetness but also a delightful crunch, making each cake irresistible. Their versatility is another reason why they'll be making a cameo in your kitchen this Easter: feel free to experiment by adding nuts, dried fruits, or even switching the chocolate for white chocolate for a lighter touch. Crafting Your Easter Nests To make these festive treats, start with melting your chocolate. Whether you favor dark, milk, or even a splash of white chocolate, just be sure to stir it consistently to achieve that silky-smooth finish. Once the chocolate is ready, fold in your cornflakes to get them nicely coated. For even better presentation, divide the mixture among muffin cups, pressing in the center to create small nests, and fill them with colorful, candy-coated chocolate eggs—ideal for those family members who take their sweet tooth very seriously! Taking it Beyond Cornflakes As the world of cooking evolves, so do the ingredients we use. While the cornflake nests are a classic favorite, similar recipes showcase how adaptable this treat can be. For instance, recipes like Cornflakes Chocolate Nests suggest merely three ingredients—chocolate, cornflakes, and mini eggs—proving that you don’t need complex ingredients to yield great results. If cornflakes aren’t your thing, don’t hesitate to substitute them with puffed rice or granola, as highlighted in several variations. A Wholesome Treat with Minimal Guilt One of the appealing aspects of these cakes is that they're quick to make and don’t carry the guilt associated with more indulgent desserts. Using just a bit of chocolate and cornflakes, these treats can fit into various dietary needs. If you wish to make them a touch more health-conscious, consider reducing the amount of chocolate and incorporating nuts or seeds to enhance the nutritional profile while keeping the crunch. Final Touches Let’s not forget the presentation! Once your cakes set in the refrigerator, consider placing them on decorative plates or wrapping them in cellophane as charming Easter gifts. They can be a delightful addition to Easter baskets or serve as a centerpiece at your festive brunch. Plus, children love the active role they get to play in creating these tasty nests. Join the Celebration The upcoming Easter holiday is a great opportunity to bond with loved ones through the joy of cooking. Whether you choose to stick with the traditional cornflakes or branch out into other cereals, take this time to engage family, unlock creativity, and whip up some delicious Easter cornflake cakes. Let the spirit of Easter inspire you to create memories that will last far beyond the treats themselves. So roll up those sleeves, gather your ingredients, and enjoy creating these delectable treats!
