Recipe: Secret Ingredient Breakfast Sundae Smoothie
Power your day with this genius high protein breakfast idea, with a super healthy secret ingredient!
Serves 1
Ingredients:
- 1 Banana, sliced and frozen
- ½ cup frozen cooked Lentils
- ¼ cup Almond Milk, or “milk” of choice
- 1 tablespoon Peanut Butter
- 1 tablespoon unsweetened Cocoa powder
Optional extras to decorate:
- 2 tablespoons shelled, salted Peanuts
- 2 teaspoons Cacao nibs
Blend, then top with peanuts and/or cacao nibs, if you are using them.
Notes:
- If you require a little sweetness try adding a teaspoon of Vanilla Extract or some Maple Syrup to taste.
- If you want to drink as a smoothie then add 1/4 to 1/2 cup extra milk, or more as necessary to achieve the thickness you like.
Prep notes:
If you prep your banana and lentils the night before, you can whip this up in 5 minutes the next morning. To freeze your banana, peel and slice 1 banana and lay out the pieces on a freezer safe plate or tray topped with banana slices. You can buy frozen lentils, or see instructions in this post on how to freeze your own lentils.
Nutrition notes:
Recipe is gluten-free, vegan, grain-free, and low FODMAP if canned, & rinsed lentils are used.
