Recipe: Savory Gazpacho Smoothie

Serves 3 x 16-oz glasses

Ingredients:

  • 3 cups Roma Tomatoes, firmly packed, about 5 tomatoes
  • 2 cups Ice
  • 1 cup Parsley, continental flat-leaf
  • 1 cup Water, filtered
  • 1 medium Avocado
  • 3 Tbsp fresh Lemon juice
  • 3 tsp cold pressed extra virgin Olive Oil
  • 2 tsp red Onion, finely chopped
  • 1 1/2 tsp Garlic, about 2 cloves, freshly minced (or more to taste)
  • 1 tsp Sun-dried Tomatoes, chopped
  • ¾ tsp Serrano Chilli, chopped, or more depending on heat (omit if alkaline)
  • ¾ tsp Celtic sea Salt

Blend until smooth and creamy, adjusting flavors to your own taste.
