This is a lovely twist on a ‘traditional’ smoothie recipe. I’m a recent convert to adding cucumber to my smoothies. It was surprising that what I think of as a pretty tasteless veggie can make such a difference to my smoothie.

Cucumbers are important to add to your diet because they’re 95% water and naturally detoxify your body; are high in Vitamins A, B and C; and contain phytonutrients that provide anti-inflammatory, antioxidant, and anti-cancer effects.
They’re also a secret weapon for nails and hair, thanks to the nutrient silica, which helps them grow strong and shiny.

Recipe: Refreshing Coconut Pineapple Cuke Smoothie
Serves 1
Ingredients:
- 1/2 cup (52 g) Cucumber, sliced, with skin if organic
- 1 heaping cup (190 g) Pineapple, cubed, fresh or frozen, omit ice if frozen
- 1/2 large Banana, ripe, frozen
- 1/4 cup (60 ml) light Coconut Milk*
- 1/2 cup (120 ml) filtered Water
- 1 Lime, 1 tsp zest + 2 Tbsp juice
- 1 – 2 Tbsp Hemp seeds or Chia seeds
- 1 large handful (70 g) greens (Spinach or Kale, organic when possible)
- 2-4 Ice cubes
* Use coconut milk for a creamy smoothie, or coconut water if you want a lighter one.
Blend until it reaches a consistency you like. Enjoy.
