I’ve been very surprised how much I like beets in my smoothies. It gives a lovely glow and is a wonderful change from green-colored smoothies and yet still is a ‘green’ smoothie – that is, it still has a veggie serving. Read on for the recipe at the end of the post.
Based on a recipe from Katie at ChocolateCoveredKatie who visited NYC and found a smoothie bar on every corner – or so it seemed. She says …
… after spending even just a day in the city, this smoothie pervasiveness makes total sense: Getting around in the city can be an event in itself, and hours of walking the streets and navigating the subway can leave one with quite an appetite. Smoothies to the rescue! They offer a quick and nourishing source of energy replenishment and can easily be taken on the go. Perfect for the city that never sleeps.
