My local store has had pineapples in stock for a few weeks, not normal fare in this area, but they’ve been sweet, juicy and delicious and we’ve been enjoying them – a lot! So when I saw this combo of pineapple and blueberry I had to try it. Result? Dreaming I’d been transported to a sunny tropical beach somewhere, as Gaby at WhatsGabyCooking said.
There are great health benefits from pineapple, mainly due to the bromelain which offers anti-inflammatory, antioxidant and digestive benefits, and may lower your risk of age-related macular degeneration. And that’s only the pineapple. Add to that the blueberries, banana and other ingredients and you’ve got a powerfully healthy drink.

This Pineapple Blueberry Smoothie is one of my latest and greatest fresh fruit inventions. It’s tropical and makes you want to be on a beach with your toes in the sand and getting a tan. Because doesn’t that just sound awesome. Minus the fact that I’m so ghostly pale right now I would be terrified to see myself in a bkini, I think being on a beach sounds kinda perfect. Hawaii would be nice. But I’d settle for a little weekend jaunt to Cabo. Or maybe somewhere in the Caribeean. But hey, I’m not picky. Give me a beach and some sunshine and I’ll be a happy camper.

No juice.. Water is best!!
Coconut milk. Strawberries. Truvia, carrot juice, and plain unsweetened Greek yogurt. Experiment with the fruits in season another don’t hesitate mixing in turmeric, ginger. Use Pineapple to sweeten if needed. Love my smoothies!
