
Olivia at PrimaveraKitchen does not like raw veggies. Her husband, who does, was away on business and there was a bag of raw baby carrots in the refrigerator that she did not want to waste – well, didn’t your mom tell you about all the starving children? So, what do you do with food that will otherwise go to waste? Throw it into a smoothie, of course!

Recipe: Olivia’s Peach Carrot Smoothie
Serves 2
Ingredients:
2 cups of Peach, chopped
1 cup baby Carrots
1 frozen Banana
1 cup Coconut Water or Water
1/2 – 1 cup Greek Yogurt
1 tbsp Honey (optional)
Blend until smooth and enjoy.
