We are always being told to eat more fruit and vegetables. That’s one reason many folks choose to have a smoothie for breakfast. We know it’s good for us.
And in my quest to increase my fruit and veggie intake, I came across an article at Cooking Light (article links are at the end of the post) that says increasing your fruit and veggie intake will make you happier. Yay! Isn’t that what we all want? To be happy?
Professor Andrew Oswald of the University of Warwick, UK, is quoted in the article as saying …
Eating fruit and vegetables apparently boosts our happiness far more quickly than it improves human health. People’s motivation to eat healthy food is weakened by the fact that physical-health benefits, such as protecting against cancer, accrue decades later. However, well-being improvements from increased consumption of fruit and vegetables are closer to immediate.
So we give you this tasty peach banana and carrot smoothie to help you boost your consumption of fruit and vegetables.
We’ve used juicy, in-season, Saturn peaches, sometimes called donut peaches or flying saucer peaches, which are a new discovery for me. I was surprised to taste just how sweet they are. Because they were pale in color I assumed they were not ripe, but that was not the case. They are absolutely delicious!!! If you have not tried them then I strongly recommend you do. You’ll be delighted.
However, if you cannot get donut peaches, the normal ones will do. Or use nectarines.
