With summer in full swing we are all looking for cool, light and refreshing drinks. This low calorie, sparkling and flavorful fruit smoothie from Lindsay Cotter is just the ticket! A tall drink to enjoy on the terrace or by the pool, it ticks all the boxes. And is healthy to boot. (You’ll find the recipe at the end.)

But when you freeze watermelon, then make it the “ice” of a smoothie, it’s pretty fantastic. In fact, it acts a natural sweetener and packs this frozen fruit smoothie with even more hydration! Watermelon is 92% water. That’s crazy awesome! And .. um, did I mention it’s 100F out? We need all the hydration we can get. I sweat going to the car or taking out the trash. Not lying.

Recipe: Low-Cal Sparkling Watermelon Berry Smoothie
Serves 3-4
Ingredients:
- 1-2 cups Watermelon, chop, deseed & place in freezer for 1 hr +
- 1 cup mixed Berries, frozen
- 1 Banana
- 1/4 c Coconut Milk/Cream OR Yogurt
- 8 oz Naturally Sparkling Water, Lime Water or sparkling drink of choice*
- (plus some for extra fizzy topping)
Optional add-ins: extra ice, honey, extra lime or lemon juice plus a slice of fruit
