Did you know carrots come in white, yellow, red and purple as well as the usual orange with which we are all familiar? The carotene is stable whether eating carrots raw or cooked, so long as they are not over-cooked. And as well as being good for the eyes, the cardiovascular system also benefits from carrot consumption.

Carrot cake is always popular. I just bought some carrots to make one to take to friends tomorrow. The carrots came with wonderful long greens and I think I’ll put some of them in a smoothie in the morning. So maybe I should try this carrot cake smoothie.
