[Recipe] Healthy Layered Peanut Butter Cup Smoothie

Now here’s a real delight I came across the other day… Its from Lee Hersh fitfoodiefinds.com who not only provides a delicious healthy recipe, but also a beautiful 2-layer presentation! A talented food artist!

It’s dairy-free, hence vegan-friendly as well as including nutritious greens. But the peanut butter cup flavor will take you somewhere else entirely! And the silky smoothness of almond milk make this a fantastic oral delight!

This peanut butter cup smoothie is packed with protein and even has a full serving of greens in it. Best part is, it’s healthy and tastes exactly like a peanut butter cup!

I actually made two different smoothie recipes and swirled them together to make sure you get some chocolate and peanut butter in every bite. Then I topped it with some vegan coconut whipped cream and an actual chunk of peanut butter cup.

Recipe: Healthy Peanut Butter Cup Smoothie

Ingredients: (Serves 2)

1. Peanut Butter Layer

  • 1 banana, frozen
  • ¼ cup peanut flour (lower fat) OR 2 tablespoons peanut butter
  • pinch of salt
  • ½ teaspoon vanilla extract
  • 1 cup almond milk*, unsweetened
  • 4 large ice cubes

2. Chocolate Layer

  • 1 banana, frozen
  • 3 tablespoons cocoa powder
  • handful of spinach
  • 1 cup almond milk*, unsweetened

Preparation: 

  1. Peanut Butter Layer: Place all ingredients in a blender. Mix until smooth.
  2. Chocolate Layer: Place all ingredients in a blender. Mix until smooth.
  3. The whipped cream on top is a necessity!
  4. Add a little drizzle of peanut butter on top. It’ll finish it off to perfection.
