What is your favorite breakfast? I have to say French toast is pretty high up on my food loves for any time of day, never mind breakfast. Especially with caramelized apples … mmmm! And loads of cinnamon. A good second would be crepe pommes canelle – in many ways not dissimilar.
Anyway, this French toast smoothie recipe is from Gina at RunningToTheKitchen who says …
… most of you probably wouldn’t appreciate me pushing a decadent French toast recipe on you while you’re in the “healthy” mindset, [so] I’m bottling up everything we love about French toast and putting it into a protein packed healthy smoothie.
Recipe: Gina’s French Toast Smoothie
Serves 1
Ingredients:
1/2 cup Friendship Dairies 1% Cottage Cheese
1 pitted Medjool Date, soaked in hot water for 5 minutes
1 teaspoon Vanilla bean paste (you can substitute vanilla extract)
1/4 teaspoon Almond extract
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/2 teaspoon Xanthan Gum (*optional but makes it nice and thick)
1/2 scoop vanilla whey Protein Powder (*optional for added protein)
1/2 cup unsweetened vanilla Almond Milk
handful Ice cubes
whipped Cream for topping
Blend until smooth and enjoy.

Note:
Almond milk is a popular choice for vegans and the ‘health conscious’ as it gives the impression of milk without the fat.
However, while almonds are a good source of protein, almond milk is not a good source of protein, unless you buy fortified almond milk. Select your product carefully as some contain carrageenan which has a bad reputation. While carrageenan is a natural product used to thicken a wide range of foods products, it has no nutritional value and may even be dangerous, causing digestive issues for some people: inflammation, gut irritation, ulcerative colitis and worse.
