What could be more representative of the Christmas season than cranberries and fresh oranges? (Well, at least food-wise!) I love the idea of being able to step out of bed in the morning and picking an orange off a tree in my garden … but since that is just a dream, I look forward to orange season and getting delicious, fresh oranges from the store.
Not only is this smoothie tasty but it’s healthy too! The recipe is from Beth at Tasty-Yummies (details at the end of the post) who says …
The creaminess of the coconut milk really compliments and offsets the tartness from the cranberries and the fresh orange juice and the cinnamon is so perfectly warming and comforting, the perfect addition. Recipe: Cranberry Orange n Coconut Smoothie
Serves 1 large or 2 small
Ingredients:
- 1 cup fresh raw Cranberries
- 1 cup freshly squeezed Orange Juice
OR zest and flesh of 2 Oranges - 1 cup canned organic Coconut Milk
- 1 frozen Banana
- 2 Medjool Dates (or other sweetener of your choice)
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon ground Cinnamon
- pinch of pink Himalayan Sea Salt
- additional Ice, if necessary
- Shredded Coconut for topping, optional
Blend until smooth and enjoy.
