It seems I never wake up properly until I’ve had my caffeine injection of a cup of coffee in the morning. Thought I’d try it a different way this time with this delicious smoothie. It includes some avocado which is really healthy – not to mention delicious! So combining it in this breakfast smoothie will not only wake me up, but sets me up for the day, too.

This recipe is based on Sinh To Bo, the traditional Vietnamese avocado shake, with the extra addition of coffee. Because, well, I need it. My kids wake up at six AM and it’s killing my slowly. The avocado and fresh hazelnut milk make it silky smooth, thick, rich and delicious … So this one is vegan, gluten free, sugar free and is packed with nutrients from the humble avocado.
Recipe: Coffee Avocado Date Smoothie
Serves 2-4
Ingredients:
1 ripe Avocado, flesh only
1-2 tablespoons Chia Seeds
8 Dates, seeds removed
1 cup Hazelnut Milk, or Almond Milk, store-bought or homemade, see below for a recipe link
1 cup strong Coffee, cooled
½ teaspoon Vanilla extract
1 big handful Ice cubes
Blend until smooth and allow to sit for a few minutes to thicken slightly. Enjoy.
Notes:
1. Avocado is perfectly packaged with the healthy fat necessary for our bodies to absorb the nutrients it provides.
2. For homemade hazelnut milk, as with most nut milks, the ratio is 1 cup nuts to 4 cups water.
OR try this recipe which, since hazelnuts can be expensive, uses a little less.
3. If your blender leaves you with whole chia seeds in your smoothies, then pulse them in a coffee/spice mill for a few seconds first.
Note:
Store bought Almond milk is a popular choice for vegans and the ‘health conscious’ as it gives the impression of milk without the fat.
However, while almonds are a good source of protein, almond milk is not a good source of protein, unless you buy fortified almond milk. Select your product carefully as some contain carrageenan which has a bad reputation. While carrageenan is a natural product used to thicken a wide range of foods products, it has no nutritional value and may even be dangerous, causing digestive issues for some people: inflammation, gut irritation, ulcerative colitis and worse.
