The only addition to this smoothie that’s not in the title is ice. So we could call it a tasty 4-ingredient smoothie – especially for those of you who say ‘less is more’ and do not like a long list of ingredients.
Whatever we title it, it’s a lovely, creamy, filling smoothie. As it’s rich with coconut milk and no dairy, this smoothie will suit those with dairy allergies, and if you’re vegan you can enjoy it, too.
The recipe is from Lisa at CookEatPaleo who says …
This is one of those last minute recipes that came about because of what I had in the kitchen – and it turned out to be one of my favorites. I had a couple of fresh peaches that needed to be used up, and a can of coconut milk in the fridge, and thought they would be great in a peaches and “cream” smoothie. I absolutely love the combination of fresh peaches and coconut milk with a hint of lemon.

Recipe: Coconut Peach n Lemon Smoothie
Serves 2; approx 407 cals each
OR 280 cals each, see below*
Ingredients:
- 1 cup full fat Coconut Milk, chilled
- 1 cup Ice
- 2 large Peaches, fresh or frozen, cut into chunks
- fresh Lemon Zest to taste
Blend until smooth and enjoy.
* To Reduce the Calories
If you’d rather reduce the calories then cut the coconut milk to half a cup and add half a cup coconut water. This gives 2 smoothies with 280 cals each. It will still be filling, but not as filling as with all coconut milk.
