This delicious smoothie recipe is from Dana at 3BoysUnprocessed (details at the end of the post.) Mint aids digestion, relieves nausea and headaches, and clears congestion, to name but a few of it’s benefits. And other studies indicate it is good for memory.
Chia seeds are full of antioxidants, protein and fiber, but some people do not like the texture. It dawned on me recently that one way around that is to blitz them in the processor before using them – or in my case, a few seconds in the coffee grinder and problem solved! They still soak up loads of water and gel nicely, adding that extra thickness that’s so good in a smoothie.
Here’s Dana’s take on including mint …
… fresh mint leaves have many awesome health benefits. From aiding in digestion to fighting acne, mint can do it! … If you’ve never been one to pick up a bunch of fresh mint at the grocery store I highly suggest it. Believe me, after you make this smoothie that fresh mint will work its way into so many other things you hadn’t even planned on making! … I might just steep it into some cream and make a batch of ganache to whip up some icing for a party this weekend.

Recipe: Chia Mint and Vanilla Green Smoothie

Ingredients:
Vanilla Layer Ingredients:
- 1 frozen Banana
- 1/2 cup light Coconut Milk (canned version)
- 1/4 Vanilla bean pod or 1 tsp pure vanilla extract
- 1 Tbsp Chia seeds (optional)
Green Mint Layer Ingredients:
- 1/2 frozen Banana
- 1 and 1/2 cups fresh Spinach
- 10-15 fresh Mint leaves
- 1/4 cup Coconut Milk
