I thought this was a fun and inspiring twist on a favorite blueberry smoothie: a blueberry pie smoothie where the ‘crust’ is made with cashew butter and almond meal. And even if you don’t want to be bothered mixing them up for a crust you can simply add them to your smoothie mix and blend everything together.

Recipe: Blueberry Pie Smoothie with a Twist
Serves 1
Ingredients:
- 1 cup Almond Milk, or milk of choice
- 1 scoop Vanilla protein/nutritional powder (optional)*
- dash of Cinnamon
- 1 cup frozen Blueberries
Additional 1/4c frozen or fresh Blueberries for topping, optional
NOTE: This recipe contains protein powders which are not recommended for children. These are optional, so even as an adult you can choose to use them or not.
Pie Crust Ingredients:
- 1 TBSP raw Cashew Butter
- 1 tsp raw Honey
- 2 TBSP Almond Meal
To make the Smoothie:
Blend the milk cinnamon and blueberries until smooth, adding the cashew butter, agave or honey and almond meal if not making the crust. Pour into a glass.
To make the pie crust:
Mix the ingredients and roll out into a ball.
Flatten on a sheet of parchment and cut into strips.
The mix is delicate and will break easily, so go carefully as you make the lattice and slide it onto the glass.
