Recipe: Berry Chia Layered Smoothie

Serves 2 large or 3-4 small

Ingredients – in order of use:

  • 4 tbsp Chia seeds
  • 500ml / about 2 cups Milk, plant based or your choice
  • 200ml / about 3/4 cup of Yogurt
  • 150ml / scant 3/4 cup Blueberries
  • 200ml / about 3/4 cup Red Berries, eg strawberries, raspberries, cranberries
  • 2 Bananas
  • 150ml / scant 3/4 cup plant based Milk.

+ more Fruit if you wish to decorate the insides of your glasses or to pile on top

Optional: a little Honey, or Maple Syrup or Dates to sweeten

 

DIRECTIONS:

Note: For the layering to work you want a thick but drinkable consistency, especially the blue and white layers.

 

To Make the Chia Pudding the Night Before

Take the …

  • 4 tbsp Chia seeds
  • 500ml / about 2 cups Milk, plant based or your choice

Mix well and leave for a few minutes, then stir again to make sure the seeds do not clump together.
Leave overnight in the refrigerator to thicken.

The next day add …

  • 200ml / about 3/4 cup of Yogurt, plant based or your choice
    OR a little more Milk

Add a little at a time to get a thick but drinkable consistency.
