I love beet smoothies. Well, let’s face it, I love beets! But not only do they taste great, they are really good for you. They are great for the cardiovascular system, fight inflammation, are rich in nutrients including manganese, potassium, Vitamin C, fiber and Vitamin B folate which is crucial during pregnancy.

Beets have both an earthiness and sweetness about them. I love them plain, on salads, in quinoa and now, in smoothies. There really isn’t a way I wouldn’t eat them.
