Bananas add such creaminess to a smoothie, along with a heathy dose of potassium. Then slip in some coconut milk and I am in smoothie heaven – amazing nutrients aside, it just tastes sooooooo good. Josephine loves berries and has this to say about her smoothie …
Use a full fat coconut milk to get as much creaminess and flavour as possible – or simply use 300 ml nut milk or regular milk. You can also use other kinds of berries, I also LOVE the raspberry version, but try to keep it simple since it’s the combination of the creamy coconut milk and the fresh berries that work the magic!

Recipe: Banana Strawberry & Coconut Smoothie
Serves 2; approx 228 cals per serving
Ingredients:
- 2 ripe Bananas
- 1 cup / 150 g frozen Strawberries (you can use fresh when in season, at which point I suggest you use frozen bananas instead)
- 1/2 cup / 100 ml full fat Coconut Milk
- 1 cup / 200 ml ice Water or Coconut Water
- 1/2 tsp Vanilla
- Zest from 1/2 organic Lemon (optional)
Directions
Add all the ingredients in a blender and blend until you have a foamy thick milk shake – Serve straight away!
