Two things that are never missing from my kitchen cupboard are oats and coffee. I always have shredded coconut, too. So, with a good stock of pineapple in the freezer and a tin of coconut milk in my basic supplies, this is an easy recipe for me to run with. And. as I like to tweak recipes, I’ll add some oats for extra protein and fiber.
