This smoothie from Ashley at CookLikeACavewoman.com is her ‘rainbow’ smoothie. However, she is the first to admit it looks nothing like a rainbow! She says it’s the rainbow of ingredients that gives the smoothie it’s name. She just loves to include as many colors as she can in a smoothie to get all the benefits of the differing nutrients available from them.

Recipe: Ashley’s Rainbow Smoothie
Serves 1
Ingredients:
- 4 to 6 Strawberries, frozen
- 4 to 6 pieces Mango, papaya, and/or pineapple, frozen
- ? Banana, very ripe is sweeter
- 3 baby Carrots
- 8 to 10 baby Spinach leaves
- A small palmful of Blueberries, frozen
- 1 heaping tsp Flax Seed, meal, or grind yourself
- ½ cup Almond Milk, unsweetened
Blend until smooth. Add more almond milk (or water) if it’s too thick for your taste.
This can also be made with fresh fruit. In which case add some crushed ice to chill.
Tip:
A teaspoon of seeds is too little for my blender, and I don’t have a mini blender. So I got out my coffee grinder instead. It had been sitting in the cupboard unused for years (I hate parting with things) so it was still there when I found a new use for it – and I didn’t have to hand out any money! As I keep saying, be flexible and use what you have – whether that means substituting one ingredient for another, or a gadget :o)
