One way to make smoothies different is to make them beautiful. Who can resist a thing of beauty? Like this gorgeous berry coconut smoothie – in this case it’s made with blueberries, but you can use any color of berries you like.
This smoothie takes a little longer than normal to make, but it is totally worth the effort – actually it’s no more effort than usual … just need a little more patience than normal.

To create the layered effect, you absolutely must freeze the smoothie between layers. Trust me, I got eager and tried to pour my layers all at once. Let’s just say the result is not a layered smoothie.

Recipe: A Thing of Beauty Berry Coconut Layer Smoothie
Serves 2
Ingredients:
for the bottom layer
- ¼ cup plain non-fat Greek Yogurt
- 6 tablespoons Coconut Milk (from a carton– like almond milk)
- 1 cup frozen Blueberries
for the middle layer
- 1 Banana
- 1 cup plain non-fat Greek Yogurt
- ½ cup frozen Blueberries
- ½ cup Coconut Milk
- 2 tablespoons unsweetened shredded Coconut
for the top layer
- 1 Banana
- 6 ounces Coconut Cream
- 2 tablespoons unsweetened shredded Coconut
- 1 tablespoon Maple Syrup or agave
- handful fresh Blueberries & Coconut Flakes, for topping
Blend each layer in order, chilling in the freezer between each layer.
