Recipe: Two-Ways Recipe 1 – Protein-Rich Berry Quinoa Salad

We’ll start with the tasty Salad recipe. Note as a salad this serves 6. Leftovers should keep well in the refrigerator for a day or two.

Ingredients:

FOR THE BERRY QUINOA SALAD:

  • 1 cup Quinoa, raw, rinsed
  • 1 3/4 cup Water (or juice)
  • 1 cup Strawberries, sliced
  • 1 cup Blueberries
  • 1 cup Raspberries
  • 1 cup Blackberries
  • 1/4 cup Almond slices, toasted

FOR THE CIRCUSY-MINT DRESSING:

  • 1 Lemon, juice and zest (or 1/4 cup lemon juice)
  • 1 Orange, juice and zest (or 1/4 cup orange juice)
  • 1 tablespoon Honey
  • 1 tablespoon Mint, chopped
