Homemade Coconut Milk

Makes about 10 cups
Approx 56 cals per cup

Ingredients:

  • 2 cups shredded Coconut, full-fat, not light
  • 8 cups filtered Water, divided

1. Soak coconut with half the water for a few hours.
Blend.
Strain.
2. Put coconut meal back into blender with other half of water.
Blend.
Strain.
Store in the refrigerator.
