Full fat coconut milk that you get in a can is filling and full of flavor. Homemade coconut milk is lower in calories about 56 calories per cup as far as I can work out. It is far superior to store-bought that usually has unwanted additives. (See the recipe at the end of the post.)

Recipe: 4-Ingredient Coconut Strawberry Smoothie
Serves 2; approx 381 cals each
Serves 3; approx 254 cals each
or see below to reduce the calories
Ingredients:
- 1 cup Coconut Milk
- 1 frozen Banana sliced
- 2 cups / 288 g frozen Strawberries
- 1 teaspoon Vanilla Extract
Blend until smooth and enjoy.
* To Reduce the Calories you have 2 Options
- Cut the coconut milk to half a cup and add half a cup coconut water. This gives 2 smoothies with 254 cals each or 3 smoothies with 170 cals each.
- Use homemade coconut milk which makes the recipe approx
If you wish to have more protein you can add:
- 1/2 cup Oats, or
- 2-4 tbs Hemp seeds, or
- 1/2 – 1 cup Cottage Cheese

Homemade Coconut Milk
Makes about 10 cups
Approx 56 cals per cup
Ingredients:
- 2 cups shredded Coconut, full-fat, not light
- 8 cups filtered Water, divided
1. Soak coconut with half the water for a few hours.
Blend.
Strain.
2. Put coconut meal back into blender with other half of water.
Blend.
Strain.
Store in the refrigerator.
