Lisa uses coconut milk in her smoothies and, again, you have a choice to use full fat canned coconut milk which makes a rich and very filling smoothie, or a lighter version made with homemade coconut milk. We have instructions for homemade coconut milk in this post.

Lisa suggests …

The amount of mint you use is really up to your taste. If you like your [smoothie] extra minty (or extra green), add more mint leaves.
