Lisa uses coconut milk in her smoothies and, again, you have a choice to use full fat canned coconut milk which makes a rich and very filling smoothie, or a lighter version made with homemade coconut milk. We have instructions for homemade coconut milk in this post.

Recipe: 4-Ingredient Coconut Mint Green Smoothie
Serves 2; approx 118 or 368 cals each
Ingredients:
- 1 cup Coconut Milk
- 1 cup Ice
- 1/2 Avocado
- 1 teaspoon organic Vanilla Extract
- 1 leaves large handful fresh Mint to taste
Optional:
- local raw Honey or Maple Syrup to taste
- a few shavings dark Chocolate to top
Blend until smooth and enjoy.
