I L.O.V.E. coconut. I like it in candy, I like it in drinks and smoothies (hence this recipe), I like it in my curry (oh my goshhhhh), I even like coconut water. Ever tried it? It’s good. If you like coconut. I probably like it even more because it doesn’t make me sick. Yeah, I am lactose intolerant. Sad right?? We lactose intolerant people have medicine we can take to alleviate the effects of dairy but I really enjoy finding or creating a fantastic recipe which calls for coconut milk because, I can eat it/drink it worry free! Annnnnd, this smoothie is healthy. Seriously! No added sugar, and it’s vegan. Bam. Delicious and healthy Raspberry Coconut Smoothie accomplished.

Recipe: 3-Ingredient Raspberry Coconut Smoothie
Serves 1
Ingredients:
- 1 cup frozen Raspberries
- ½ – 1 cup Coconut Milk (depending on how thick you like it)
- 1 medium Banana, peeled sliced and frozen
Optional:
2 teaspoons Coconut Extract (optional)
shredded Coconut Flakes
sweetener of choice, to taste
