I just ran across this wonderful recipe for an avocado smoothie. Only 6 ingredients after the mandatory banana (!!). Its simple & quick to make, about as delicious as they come, and full of nutritious goodness. It’ll also get your creative juices flowing and help you come up with some great new ideas for your own variations with other berries or fruit. Avocados are a good source of fiber, potassium, and vitamins C,K, folate, and B6. Half an avocado has 160 calories, 15 grams of heart-healthy unsaturated fat, and only 2 grams saturated fat. One globe contains more than one-third daily value of vitamin C, and more than half the day’s requirements of vitamin K.
One food critic claimed, “In this single delectable fruit are combined the protein of meat, the fat of butter [but much more wholesome!], the vitamins and minerals of green vegetables, the flavor of nuts, a six course dinner.”
